My Grandma Would Be Proud


At least I hope so! I just recently learned that you can can meat. Our friends Mark and Tiffany were so nice to share some that they had made so we could try it out. We tried out the ground beef and it wasn't too bad (we made it into tacos). So I decided that I wanted to try my hand at canning and get some food on our shelves as part of our three month supply. The only drawbacks were that I needed a pressure canner, some jars and lids, and the meat. Well, one of those items got checked off my list at last weeks enrichment canning class. I took my mom with me to the class and while we were there she mentioned that she had my grandma's pressure canner in her attic. Check! And guess what? While I was in the attic getting the pressure canner I found several boxes of jars! All that was left was the meat. Lucky for me, Fry's had chicken on sale this week for $1.67 a pound (which is a great price). So I got everything set and tried it out today. It was really easy (it just takes some waiting around time) and I now have eight jars of chicken on my shelf. Only 16 to go to complete my three month supply of chicken. I know it's not very pretty to look at, but I'm hoping when it gets mixed together with my other ingredients it will make a tasty meal! Some of the recipes I'll use it in are: chicken salad (Shauna let us sample this at the enrichment meeting), BBQ chicken sandwiches, chicken tacos, chicken ala king, chicken quesadillas, chicken pot pie, chicken chili, hawaiian haystacks, and chicken noodle soup. I'm also going to try canning beef chunks, ground beef, and pork. I just have to wait for them to go on sale!

I LOVE having bottled chicken, I start to get panicky when I run out. Chicken makes so many different meals at my house and it's so easy to already have it cooked. I love to make BBQ chicken pizza with it, Chicken Enchiladas, Chicken Alfredo, Chicken and Rice and so much more! I'm going to do a bunch more this week in fact, 'cause Albertson's has it for $1.67 with no limit and I like to do a lot at once.

Your are so good Stephanie, I tried to make jelly, but it just seems that time isn't in my best interest right now. It drives me nuts, but that's what happens with newborns. Looks like you did great!

WOW! That is AWESOME! I wish I knew how to do it. I couldn't go that night...bummer!:( That is SO great that you are that much more prepared with your food storage.:)
